We put so much time and care into growing our pastured beef, we want to make the best use of the whole animal when we butcher it. So alongside the mouth-wateringly tender prime cuts you’ll find here, there are lots of new discoveries to be made too. Cuts such as the chuck, taken from the neck, or the hanger steak, with its rich, savoury flavour, deserve to be more widely celebrated. Think of them as a special treat – there’s a lot of sirloin in a cow, but there are only two cheeks and one tail!
