ORGANIC RIB OF BEEF
The Beef Fore-rib joint is the classic 4-5 bone beef rib roasting joint. Also known as the prime rib, in the UK its our standard rib roast.
At Haye Farm we mature and dry-age our whole, grass-fed fore-ribs for a number of weeks before trimming. We leave the chine bone attached for flavour, plus it also allows the rib to stand up naturally whilst cooking and for carving - a pretty impressive piece on the table!
There is ample marbling running through the joint which keeps it moist and intensifies flavour. For a larger rib joint it's best to cook slowly, allowing the outer rib cap to break down gently.
