Bresaola crafted using the traditional Italian method, which specifically calls for the air-dried eye of round cut, also known as the 'beef salmon fillet' which features delicate streaks of marbled fat.

 

It’s rich, complex, gently spiced and really melts in the mouth.


The Organic Cure handcrafts charcuterie made in the traditional way, using the finest organic, high welfare produce reared at Haye Farm, our home in East Devon.
