The combination of meat and bone in the scrag end, a cut from the neck, is tastier than it sounds, adding an incredible depth of flavour to broths, soups and stews. Our lamb belly is not to be missed either. Try it rolled and stuffed with mint and parsley and cooked low and slow until it melts in the mouth.
