THE CRAFT BREWERY
The organic brewery started in 2018. The idea came about via a conversation with Dan Fitzpatrick & Jason Slade who wanted to create an Organic drinks business using locally grown ingredients whilst recycling waste agricultural products back into the ecosystem. The symbiosis of the working farm and an organic brewery was a perfect match and is reflected in the brewery name - Gilt & Flint - where the gilts (female baby pigs) feast upon the barley and then fertilise our flint fields.
Starting at the top of the hill, our fresh spring water is filtered and heated to form the base of each beer. The mineral profile and pH or our water is prefect for our styles of beer and is the backbone of what we produce. Next we use UK grown organic malt, including our own barley, to style and flavour each beer. Foraged ingredients from the farm and elsewhere are added to the beer along with organic hops to create our unique styles.
We produce 4 core beers - a fruity IPA, an Oatmeal Stout, a citrus Pale Ale and and an award winning Helles style lager. Alongside these we produce seasonal specials using any seasonal ingredients from the abundant farm produce and hedgerows.
It’s been an incredibly successful year for the brewery and we have just upgraded to a 2500 litre system that will produce bottles, cans and kegs of delicious organic beer available direct or on our website. Look out for exciting things coming over the next few months including our own farm grown hops to be used in our beers.
