The lamb shoulder on the bone with the front shank attached is simply divine, especially with neck fillet attached. Should be cooked all day and left to rest. The meat should fall off the shoulder blade perfectly.

About Our Lamb
Our sheep graze exclusively on organic pasture as part of the farm’s rotational grazing philosophy. They are also 100% grass fed, a combination of this and their breed means that they grow slower than your average sheep. This produces a high-quality lamb with exceptional texture and flavour.
Our organic lamb is farmed to strict Soil Association standards. We use a local, small-scale abattoir and the meat is butchered on-site.
Here at Haye Farm, our aim is to make a positive difference to the land. We see ourselves as custodians of this corner of East Devon, and so we farm in a way that increases biodiversity, nurtures the ecosystem that we’re part of and provides for future generations.
