ORGANIC LAMB SHANKS
Our organic lamb shank is rich, tender and deeply flavoursome — a traditional cut perfect for slow cooking and comforting dishes.
Raised on pasture at Haye Farm in Devon and our trusted partner farms, our lambs graze naturally outdoors on organic grass pasture, producing high-welfare organic lamb with exceptional flavour and tenderness.
Carefully prepared by our butchers, this organic lamb shank is best cooked whole and slowly braised to unlock its full flavour. The naturally gelatinous meat becomes meltingly tender, creating a rich, hearty dish with beautifully deep flavour.
Braise gently in stock, red wine, garlic and herbs until the meat falls from the bone. Perfect served with creamy mash, root vegetables or seasonal greens.

Our sheep graze exclusively on organic pasture as part of the farm’s rotational grazing philosophy. They are also 100% grass fed, a combination of this and their breed means that they grow slower than your average sheep. This produces a high-quality lamb with exceptional texture and flavour.

Haye Farm is farmed to strict Organic Farmers & Growers (OF&G) standards. We use a local, small-scale abattoir and the meat is butchered on-site in our SALSA approved facility.

Here at Haye Farm, our aim is to make a positive difference to the land. We see ourselves as custodians of this corner of East Devon, and so we farm in a way that increases biodiversity, nurtures the ecosystem that we’re part of and provides for future generations.
